There are two books (that I know of) on $\Gamma$-convergence, including "An Introduction to $\Gamma$-convergence" by del Maso, and "A Handbook of $\Gamma$-convergence" by Andrea Braides.
There is also a lecture series "$\Gamma$-convergence for Beginners" by Braides.
